September 1st is Kallia’s birthday. And, as every year, we would rather share it than simply celebrate it.
In Crete, when there is something to celebrate, we set the table. There is always another chair, another plate, another glass to fill.
Because hospitality here is not simply about welcoming someone in. It is about sharing what we have — our food, our stories, our land and our rituals.
On September 1st, we will gather in the courtyard of Agia Kalliopi, the little church Kallia’s parents built as a gift to the Saint after Kallia came into their lives.
Under the olive trees, we will set a long table with traditional Cretan food, local ingredients and everything that makes a gathering here feel like home.

Fresh pasta made by hand. Bread, extra virgin olive oil, local cheese, tomatoes, herbs and recipes passed from one generation to another.
Nothing complicated. Just honest food, prepared with care and shared generously.
